Pork Chops with Apples and Onions
1 large onion 1 large Gala or Granny Smith apple, halved, cored and thinly sliced Pepper 2 tablespoons extravirgin olive oil 4 bonein, centercut pork loin chops 2, 3 cup barbecue sauce Heat 1 T. oil in a large skillet over medium high heat. Sauté onions and apples until light browning of onions. Remove from pan and set aside. Add 1 T. oil to medium high skillet and add seasoned pork chops, flipping once, until golden brown, 2 to 3 minutes per side. Arrange pork chops on top of onions and
