If we have God the Father, then why don t we have God the Mother , Church of God

I became more curious after reading the Bible. Then God said, Let us make man in our image, in our likeness (Ge 1:26). God is only one, the Father. However, why does God say, Let us make man in our image The we in the book of Genesis refers to the Trinity: the Father, the Son, and the Holy Spirit.
