MY FAVORITE PASTA
RECIPE BELOW Bucatini AllAmatriciana Ingredients Bucatini pasta San Marzano Plum Tomatoes guanciale pecorino cheese peperoncino (or red crushed pepper) salt any dry white wine (optional) Instructions: Boil salted water for pasta. Crush the plum tomatoes by hand. In a pan, add in the cubed guanciale and cook till brown and crispy. You wont need oil because it has plenty of fat. Remove most of the oil. Add the peperoncino. Turn off the heat, wait a min, then add a splash of white wine (optional). Let that reduce for about 30 seconds then add the tomatoes. You shouldnt be able to smell any wine. Cook the pasta and add it to the sauce al dente. Add about half a cup of pasta water with your desired amount of cheese and combine together. Add basil to sauce and or add for decoration.
