In a food processor, combine all the ingredients together to a crumblike texture. 2. Spread the mixture onto a silicon mat and rest for one hour in the fridge. 3. Preheat oven to 330 F. Bake chocolate cookie crumbs for 20 minutes. Let cool. 4. Place water in a small bowl and sprinkle the gelatin powder. Let it set for about 10 minutes. 5. In a small sauce pan, pour the passion fruit puree and bring to a boil over mediumhigh heat. once it starts boiling, remove from heat and add the hydrated gelatin.
