Coconut Cake ( Raffaello cake) Recipe
This Raffaello inspired cake has sponge cake layers that are sandwiched between a sweet coconut filling. The cake is covered with cream and coconut shavings. A taste of this cake really reminds of wellknown candies named Raffaello. If you like these candies taste, you must to bake this cake Ingredients For sponge layers: Egg yolks 2 Sugar 80g Oil 65ml Milk (warm) 90ml Flour 130g Baking powder 1, 2 tsp Egg whites 4 Salt 1, 4 tsp Sugar 25g For cream filling: Egg yolks 3 Egg whites 1 Sugar 110g Starch 15g Milk 150ml Cream 30, 250ml Coconut shavings 50g Coconut shavings for topping (to taste) Baking tin: 24cm For decoration we used mastic for cake.
