Fresh Tomato and Black Bean Salsa, Emeril Lagasse
Simple ingredients with big flavor This incredibly easy to make Fresh Tomato and Black Bean Salsa is perfect served alongside crispy tortilla chips, but its equally delicious as a topper to your favorite tacos, salad or burrito bowl. FRESH TOMATO AND BLACK BEAN SALSA MAKES 6 TO 8 SERVINGS 4 cups chopped vineripened tomatoes 2 cups dried black beans, cooked in salted water until tender, cooled (about 4 cups) 1 cup small diced red onions 1 large fresh jalapeno, seeded and cut into small dice 1, 2 cup loosely packed chopped fresh cilantro leaves 2 tablespoons chopped fresh parsley leaves 1 tablespoon chopped garlic Salt Freshly ground black pepper 6 tablespoons fresh lime juice 4 tablespoons extravirgin olive oil Crispy corn or flour tortilla chips, for serving Combine the first seven ingredients in a mixing bowl.
