Braised Country Style Ribs with White Beans, Emeril Lagasse

BRAISED COUNTRYSTYLE RIBS WITH WHITE BEANS SERVES 6 TO 8 3 pounds countrystyle pork ribs or rib chops 1 tablespoon coarse salt 2 teaspoons freshly ground black pepper 1, 4 cup olive oil 2 cups diced onions 1 cup diced green bell pepper 1 cup diced celery 2 tablespoons minced garlic 1, 4 cup allpurpose flour 1, 2 pound dried white navy beans 8 cups chicken or beef stock 1 (14 1, 2ounce) can diced tomatoes 2 tablespoons chopped fresh sage leaves Steamed white rice, for serving (optional) Cooked kale, for serving (optional) Place ribs on a rimmed baking sheet and season both sides with salt and pepper.
