Duck Baked in Pastry ( Canard en Croûte)
Ingredients: 1 whole duck (the one I used weighted 2Kg) For the filling: 4 big, mediumsized potatoes, 1 Cup of white wine, 1 tbsp. of salt, 1 egg, 1 big onion, 23 small carrots, 1 tbsp. of butter, the liver and heart of the duck finely chopped, 1 tbsp. of finely chopped orange skin and 2 finely chopped garlic cloves. For the pastry: 5 cups of generalpurpose flour, 2, 5 cups of butter, 1 tbsp. of salt, 1 egg and 1 cup of water. The recipe yields 67 servings. We accompany it with wine and layered salad.
