GOZLEME Delicious Turkish Street Food freshly made at Shamata Cafe, Green Lanes, London

I have gone past some of these shops often wondered what the ladies in the window are rolling out making. It turns out that they are making Gozleme; a Turkish stuffed flat bread; (similar to a French crepe, pancake or an Indian Masala Dosa or stuffed Paratha), usually freshly rolled out, filled with a savoury (or sweet) filling then cooked on a domed, metal griddle, hot plate.
