Roasted Italian Stuffed Peppers Full of delicious flavour. This recipe makes 8 stuffed peppers 8 medium sized peppers of your choice 2 cloves of minced garlic 1 medium sized of chopped onion 1 medium diced carrot 1 diced celery stick 1 cup chopped kale (optional) 1, 2 cup fresh parsley 1 cup of crushed tomatoes for the filling mixture 1 1b of ground beef. You can substitute the ground beef for any ground meat you like. 2 cups of brown rice. leave the rice a bit undercooked 1 cup of shredded mozzarella cheese 1 cup of grated parmesan cheese 1, 2 cup of tomato for the topping 1 tsp oregano Salt pepper to taste Olive oil You can fill these peppers with any type of filling, use white rice, quinoa, or all veggies of your choice. Don t over cook the filling, it will finish cooking in the oven Finely chop ingredients it makes it easier to stuff the peppers cook for 1 hour total time. Cover with foil for the first 30 minutes,
