F09. Yogurt Fatto in Casa
Lo yogurt è una preparazione lattea speciale: un alimento funzionale, tradizionale e probiotico che, per la legge italiana, non dev essere preparato con latte in polvere, addensanti né gelificanti. Lo Yogurt si ottiene dalla fermentazione acida del latte, a sua volta operata da microorganismi in grado di modulare le caratteristiche organolettiche e chimiche del latte. I microorganismi maggiormente coinvolti nella trasformazione del latte in yogurt sono Lactobacillus bulgaricus e lo Streptococcus thermophilus: tali batteri trasformano lo zucchero principale del latte (lattosio) in due glucidi più semplici (glucosio e galattosio) per poi convertirli in acido lattico. Il sapore piacevolmente acidulo dello yogurt è dato proprio da tale trasformazione acida; mentre la sua cremosità è data dalla combinazione e dalla concentrazione di Lactobacillus bulgaricus e Streptococcus thermophilus nel latte.
