Artolaganon bread from Ancient Greece
Both Athenaeus (2nd, 3rd century CE) and Pliny the Elder (1st century CE) mention a Greek bread speciality called artolaganon, bread cake, which is prepared with milk, pepper, wine and lard or oil. There is no mention of the leavening agent, yeast or sourdough. I am using wine yeast from fresh grapes, a common leavening agent in antiquity, but feel free to use baker s yeast or sourdough.
