Capocollo, Capicola Day 2: Rinse, Spicing Hanging
Capocollo, Capicola or no matter how you pronounce it, this dried cured meat is delicious. After 24 hours, we reconvene in Giovanni s basement to rinse off the jewels and get the seasoned and prepped for hanging. For reference, we filmed this on Friday 12, 29, 2018 at 11 AM.
